1. Whip 3 egg whites and 1 while egg with 1 tbs water.
2. Dice 1 tomato and ¼ red onion.
3. Heat pan and add tsp of water before pouring in whipped eggs.
4. With a non-stick spatula move eggs while they cook.
5. Add the diced tomato and onion in the center and fold the omelet over on itself.
6. Add salt and pepper.
