Cold Asparagus Salad

Ingredients

• Asparagus spears
• 3 tablespoons lemon juice
• Fresh chopped mint leaves (or parsley)
• 2 tablespoons of caper juice
• 1 tablespoon finely minced red onion
• Salt and Pepper

Directions

1. Lightly steam the asparagus until tender.
2. Marinate in juices and spices for at least 30-40 minutes.
3. Enjoy!
